I’m a big quiche fan, its a great dish for breakfast, lunch and dinner.
This morning, I used whole wheat tortillas to make a quiche crust. It was so much easier than making the dough from scratch or buying the pre-made dough and rolling it out. Its not nearly as beautiful as a traditional quiche, but it tastes just as good, or even better!
Tortilla Spinach Quiche
2 medium tortillas
1 Tbs butter
6 large eggs
1/4 C milk
4 slices of cheese
Tomato
Onion
3/4 bag of spinach
1) Place 1 medium tortilla at the bottom of the pie pan. Then cut the second tortilla into strips and line the pie pan. I buttered the fronts and backs lightly. Place in oven at 350 and bake while you prepare the other ingredients.
2) Whisk together 6 eggs and milk. Whisk for about 3 minutes.
3 ) Saute chopped onion for 2-3 minutes on medium heat. Add chopped spinach, cook for about 1-2 minutes and remove from heat.
4) Pull the tortilla crust out of the oven and pour the spinach/onion mixture into the pie pan, the add eggs. Bake for 15 minutes. While the Quiche bakes, prepare the cheese and tomato. I used slice cheese out of laziness.
5) After 15 minutes, remove quiche from oven and place cheese then tomatoes on top of the quiche, continue to bake for another 30-35 minutes.
